1 lb Spaghetti – cooked
3 Roma Tomato – seeded, diced
1 White Onion - small dice
1 lb 31/40 Shrimp – peeled deveined
1 jar Bottled Thyme Chicken Jus
2 clove Garlic – minced
9 oz Arugola
TT Salt & Pepper
Pinch Red Pepper Flakes (optional)
As Needed Oil
Garnish Parmesan Cheese - shaved
In a large skillet, heat up on med-high heat. Add enough oil to sauté the shrimp. Place each shrimp flat onto the pan. Sear on each side for 1-2 minutes and remove from the pan.
Optional - you can grill the shrimp for added flavor to this already tasty dish!
Lower the heat to medium. Using the same oil that you cooked the shrimp with, add the onion and saute until they get soft; approximately 3 minutes. Add the garlic and toast until you can smell the garlic.
Add the tomato and stir the garlic into the tomato so it doesn't burn. Add the Chicken Jus and bring to a simmer and add the shrimp.
After about a minute of simmering, add the pasta (that’s already been cooked) to the pan, stirring well to make sure everything is well incorporated. Add the arugola and mix into the sauce. Cook for another minute and then plate.
Sprinkle some shaved Parmesan Cheese on top. Serve & Enjoy!
